Obituary

On August 31, 2014, the Lord took home an Angel, Elsie Rosa Ada Steubing Saathoff, at the age of 91years, 11 months, and 5 days. Elsie was a beloved and devoted wife, mother, daughter and friend. She was strong minded, strong willed, and a survivor. This was witnessed through her faith, strength, and endurance through many challenges in her life. Losing her mother at a young age she became the " woman " of the house for her father and brother. Elsie was wise beyond her years as a young woman and later triumphed over her own bout with cancer. She faced every challenge in her life head on, developing an unwavering faith. Elsie was born to Edwin and Adela Gass Steubing on September 26, 1922, on the family farm west of San Antonio. She was baptized on April 22, 1923, and confirmed on December 5, 1937, at Zion Evangelical Lutheran Church in Helotes, Texas. She was introduced to Chester Joe Saathoff, who later became her husband, by Hobby and Elrine Schuehle. The two couples shared many years of memories and fun. Chester and Elsie were married on April 19, 1949, at the Zion Lutheran Church in Helotes, Texas, during a flooding rain. They began their married life on the family farm in Hondo, Texas, where they lived all of their lives. They welcomed their first son, Myron, in April 1951 and then twins, Lanell and Cornell, in January 1954. Elsie and Chester always looked forward to gatherings with friends. They especially enjoyed nights of dancing and conversation at the Quihi Dance Hall with Hobby and Elrine Schuehle and Edgar and Shirley Saathoff. Elsie loved people and they loved her. When her children went to school, she worked in the Hondo ISD cafeterias for 13 years. Elsie's love for cooking was evident by summers spent cooking at the AARP camps and 4-H youth camps in Leakey, Texas. She was always ready to teach someone how to make one of her "special" recipes. Her love of country living and animals influenced her long, yet rewarding workdays. She supplemented the family income by selling fresh milk, cream and butter from the family dairy; eggs from her beloved chickens; and farm fresh turkeys during the holidays. Upon retiring from Hondo ISD, she returned to help Chester on the farm and went back to her love of gardening and raising chickens. Elsie worked hard and loved hard her entire life. After raising her children, Elsie and Chester enjoyed travelling and seeing new places. Their travels included many cruises and also bus tours through several states. The couple frequented casinos in Las Vegas and Louisiana with friends where Elsie loved to "test" her luck at gambling. As a member of St. Paul Lutheran Church, she served as a Sunday school and vacation Bible school teacher, Alter Guild officer, Women of the Word officer, and various other committees. She loved to help prepare food for families that had lost family members. Elsie was also a member of Hermann Sons Hondo Victory Lodge 161 where she shared many delightful hours with her Hermann Sons sisters. She is preceded in death by her husband, parents, brother Emil Steubing and sister-in-law Aline. She is survived by children: Myron Saathoff and wife Neva; Lanell Floerke and husband George; and Cornell Saathoff and wife Onnie, all of Hondo, Texas. Grandchildren: Tanessa Saathoff Sawyer and husband Brett; Tate Saathoff and wife Lauren; Nichole Floerke Boyd and husband Fred; Kristen Floerke Brittain and husband Corey; Catherine Saathoff, Ryan Saathoff, and Rees Saathoff. Great-grandchildren: Emma and Ethan Boyd; Kinsley, Keira and Kamdyn Sawyer; and Brody, Ella, and Avery Saathoff. She also leaves behind loving caregiver and friend, Martha Garcia. Visitation will be held on Friday, Sept. 5, 2014 from 5 to 8 p.m. at Guinn-Horger Funeral Home in Hondo. The Funeral Service will be held on Saturday, Sept. 6, 2014 at St. Paul Lutheran Church in Hondo at 10 a.m. Interment will follow at the Hondo Oakwood Cemetery.
